Up the western flank of Haleakalā, the land turns cool, green, and rolling — this is Kula, Maui's upcountry, where the air is crisp and clouds drift through in the afternoon. Kula Botanical Garden has occupied eight of these acres since Warren and Helen McCord opened it in 1971, and it remains a family-run, low-key place: a network of shaded paths winding through more than 2,000 kinds of plants suited to the elevation. The garden is best known for its proteas — the spiky, sculptural South African blooms that thrive in upcountry Maui's cool climate and have become a signature crop of the region — alongside native Hawaiian koa and koaiʻa, bromeliads, orchids, fuchsias, and a small bog of carnivorous plants.

It's a self-guided wander rather than a manicured showpiece. Paths cross a covered bridge over a small stream, pass a koi pond and a walk-through aviary, and lead by a carved tiki and a 'poison garden' of toxic ornamentals labeled for the curious. The whole loop takes under an hour at an easy pace, and the elevation makes it a genuinely different Maui experience — cool enough that the garden runs a Christmas-tree program in season. It pairs naturally with a drive up to the Haleakalā summit, a stop in the paniolo town of Makawao, or a visit to one of upcountry's lavender farms and wineries. Bring a light layer; it's often ten to fifteen degrees cooler here than on the coast.
